Rhubarb gin \o/

I've inherited a rhubarb plant on plot 1a, we've made some crumble and we've made some jam. Wondering what else we could do with rhubarb I came across a recipe from rhubarb-gin and though what a great way to use rhubarb.

Recipe:

2 x Bottles of gin of your choice ( I went with Tesco London Dry gin £8 a bottle)

500g of chopped rhubarb

50g of sugar

half a lemon

Sterilise a container that can seal in the microwave, add everything to to container and leave it for about two weeks in a cool dark place. Once a day shake it a little bit.

Two weeks later drain it into sterilised containers and enjoy it with some tonic.

Two weeks later the gin would have taken on the colour from the rhubarb
